Tomatoes and peppers on toast

Does what it says on the tin, really. Good things on toast. Featuring loads of sherry vinegar (the superior choice of the vinegars) and our very own Saint Rosalia olive oil. Also a win with a dollop of ricotta on top.

 

 

INGREDIENTS:

-a few red peppers

-a few medium tomatoes

-nice bread

-garlic

-basil

-salt

-sherry vinegar

-good extra virgin olive oil

 

METHOD:
  1. Preheat oven to 200c.
  2. Cut a few peppers into thick strips and dripppp on salt, olive oil, sherry vinegar. Pop in oven for 30 mins ‘til slightly blackened.
  3. Do the same with some nice medium tomatoes, chuck them in the dish whole for the last 15 mins ‘til bursting, along with some peeled garlic cloves + more salt.
  4. Take out the oven when done, give a good stir, add basil leaves and good splash more shez vinegar.
  5. Toast some nice bread, rub with raw garlic, drizzle on Saint Rosalia olive oil.
  6. Spoon on the mixture and finish with more salt and olive oil!!!!
