Pan fried gnocchi, dried tomatoes & olives

A really easy, rich and satisfying meal that's on the table in 20 minutes…perfect for a midweek dinner!

(serves 2-3 growing adults/4 wimps)
-A pinch of dried chilli flakes
-1 clove garlic, diced
-2 tbsp of cooking evoo & a good drizzle of Saint Rosalia for finishing
-500g gnocchi
-100g semi-dried tomatoes, chopped
-150g olives, chopped
-Handful of fresh basil leaves, torn
-50g parmesan, grated



1.Heat the oil in a large frying pan and add the chilli and garlic. Cook for 1 minute.

2.Add the gnocchi, and cook, stirring occasionally, for about 8 minutes, or until slightly puffed and golden. Add the tomatoes, olives, and basil and cook for a further 1-2 minutes.

3.Stir through the parmesan. Serve, drizzle with a glug of Saint Rosalia and garnish with extra basil leaves, if desired.
